Chimichurri Chicken - Rub skinless chicken breasts with olive oil, cumin, salt and pepper. Grill or bake. Make chimichurri sauce by mixing 2 cups finely chopped cilantro, 1 tsp. minced garlic, 1/4 cup red wine vinegar and 2/3 cup olive oil. Top chicken with sauce and diced avocado.

Artichoke tomato chicken – Saute 4 salted boneless skinless chicken breasts in olive oil until golden. Remove from pan and a dd 1 diced red bell pepper and 1 diced onion; cook until soft. Add a 14 oz. can diced tomatoes, 1/4 cup tomato paste, 2 tsp dried oregano, 1 can drained artichoke hearts and 1/2 cup water. Return chicken to the pan and simmer, covered, for 10 min.

Bisquick Cheeseburger Pie Recipe

Now that you know how to make your own Bisquick mix, here is a Bisquick Cheeseburger Pie Recipe. I got this recipe from an old friend who put together a cook book of all her favorite tried and true recipes. If you don’t want to make the crust just use a frozen pie crust. That makes the recipe go much faster.

Bisquick Easy Cheeseburger Pie

1 cup biscuit mix
1/4 cup cold water
1 lb. ground beef
1/2 cup chopped onion
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. pepper
1 Tbsp. biscuit mix
1 Tbsp. Worcestershire sauce
2 eggs
1 cup small curd cottage cheese
2 medium tomatoes sliced
1 cup shredded cheese

Healthy Dinners That Kids Like

Budget Friendly Dinners


I found a great article with a list of 50 great budget dinners and they all sounded wonderful. As I looked at the list though I could see that many of them would not appeal to kids. So, I went through the list and picked the ones I think most children would like. So here they are:

Grilled Cheese and Tomato – Butter outsides of thick sliced bread. Sandwich together sliced tomato and plenty of Monterrey Jack cheese. Grill on medium low heat in a non stick pan until toasted on both sides until cheese is melted.

Greek yogurt is wonderful. It is tastes great and is full of stuff that is good for you – calcium, probiotics, protein. The only drawback is the cost. But cheapskateliving has found a way around that. Make your own greek yogurt. It is really easy to do and doesn’t take much time. Your only investment is cheesecloth which you can find at your local grocery store.
