CHEAPSKATE COOKING!

This is a great cheapskate recipe for tuna fish! They are tuna patties, tuna cakes, tuna croquettes, or whatever you’d like to call them for the mood you are in! Compare them to crab cakes or salmon patties! But with the price of tuna (especially when you find a sale) being lower than more exotic seafood, you can make a delicacy for pennies instead of dollars! It only takes minutes to prepare these, and they also keep well in the freezer.

You Need:

  • 1 12 oz can Tuna Fish (I prefer Water Packed).
  • 6 Crushed Up Crackers or 1/4 Cup Breadcrumbs or Bizquick or Flour - Whatever You Have like that works)
  • 3 Eggs (Yes, you can use egg beaters).
  • 3 Tablespoons Chopped Onions (dried onion works fine).
  • Salt/Pepper/Garlic/Parsley Flakes To Taste - Experiement with this. Some people like a little red pepper too!
  • Pam or Oil To Fry, and Maybe 1 tsp butter or margarine for taste

Simply mix up the tuna, cracker crumbs (or substitute), eggs, and onions until you have a well blended pasty mix. Heat your frying pan and add your oil or pam. I like to melt in a little butter for taste. It’s that pinch of the good stuff that makes food great without breaking the calorie or money budget!

Drop Large Spoonfuls of the batter into your pan, and flatten it a little with the back of the spoon. My cakes are small, maybe sillver dollar size. Some people prefer to make larger ones with 2 or three spoons of mix. Fry until brown on one side, then flip one time until brown on the other.

Cover a plate with a paper towel so you can place the cooked patties on them, and absorb excess oil. These are great served hot, but you can microwave them for a few minutes if you need to store them in the fridge for awhile.

Serving Suggestions for Cheapskate Tuna Cakes:

My kids like them served on hamurger buns with lettuce and a little fish sauce (or even catsup!).

I like them without the bun, served with horseradish sauce or sour cream.

If you have any suggestions, please add them to the comments!
